Agroecological Food Processing and the Role of Technical Assistance and Rural Extension (ATER): Food Dynamics and the Rescue of Peasant TraditionsAgri-food systems; Food culture; food sovereigntyThe objective of this work is to identify, characterize and describe the relationships between the supply of processed products, by agroecological family farmers who are associated with Agroflor, and the demand for processed products at agroecological fairs, in which their products are sold. Producers carry out their activities on properties located in the municipality of Bom Jardim – PE and neighboring municipalities, such as João Alfredo and Orobó, located in the micro-region of Médio Capibaribe Pernambucano. Data collection will be carried out through interviews, filling out a questionnaire, through visits to properties and fairs where the products are sold. As a thesis product, a book will be created, with the recipes (images, stories, ingredients and method of preparation) and their respective families, enabling the preservation of their memories and replication of the recipes.
